This brine really enhances the flavor of any bird. Sea salt, brown sugar, cloves, nutmeg, juniper berries, black peppercorns, garlic, rosemary & dried fruit.
Combine half a cup with 1 gallon of warm or room temperature water. Allow contents to dissolve and mix. Submerge thawed bird (whole or parts- Turkey, Chicken, Cornish Hens..etc) into brine water. General Chicken Brine instructions 2-3 hours room temp or 4-6 in the fridge. General Turkey Brine instructions 12-24 hours in the fridge. For large birds, add more water and additional brine. Rinse before cooking.
