The thin covering of the shell of the nutmeg, its flavor is similar, but more delicate. A small amount will add fragrance without imposing too much flavor. Mace is a little more intense than nutmeg when it comes to flavor. It is spicier with a flavor profile that has many of the qualities of black pepper.
Wonderful in soup, cream sauce, lamb, chicken, potted meats, cheeses, stuffing, sausages, puddings, and baked goods. Also French, English, Asian and Indian cuisines, garam masala and curry.
